Meet our extra special potato...
Our potatoes vs. other potatoes
Our potatoes
-
Yellow skin & yellow flesh potatoes
-
Very potato-y flavor
-
High specific gravity
AKA a higher starch to water ratio, meaning they’re denser, drier, and more likely to become a super crispy chip.
Other potatoes
-
Standard white chipping potatoes
-
Mild, way less potato-y flavor
-
Low specific gravity
AKA a lower starch to water ratio, meaning they’re softer, water-y, and less likely to become a crispy chip.
Where the magic happens (the potato farm)
These extra special potatoes don't grow just anywhere. Ours come from North Dakota's Red River Valley & Northern Illinois!
Why?
Because these places have the ideal climate and soil for growing our special yellow skin, yellow flesh potatoes.
-
LIGHT, FLUFFY, NUTRIENT RICH SOIL
Light, fluffy soil (without a lot of clay) means water can easily flow to the potato crops!
-
WARM DAYS & COOL NIGHTS
This temperature gradient allows more dry matter (starches & fiber) in the potato to grow. More dry matter = crispier chip!
From sprout… to tuber… to potato!
It takes approximately 120 days (aka 4 months) for our seed potatoes to mature into real & perfect potatoes!!!!
-
Sprouting
Day 0 -
vegetative growth
Day ~14 -
tuber formation
Day ~35 -
Harvest
Day 90-120
Dry farming is cool!
Plants need water to grow! Dry farming just means there are no built-in irrigation systems needed.
Our farms depend on rain and other natural water sources (like the Red River, which flows through North Dakota!)
