Winter Crunchy Salad
Will be crunching on this all winter long!

Ingredients
⅓ cup Drizzle
Kosher salt
Freshly ground black pepper
½ small shallot
½ large lemon
1 small garlic clove (grated)
2 tablespoons Dijon mustard
1 large bunch Tuscan kale
¼ cup sliced almonds
¼ cup pumpkin seeds
2 ounces smoked mozzarella (shredded)
1 sliced apple

In a small bowl, whisk together the Dijon mustard, lemon juice, shallot, and grated garlic until smooth. Slowly stream in the olive oil, whisking continuously, until the dressing is emulsified and glossy. Season generously with kosher salt and freshly ground black pepper.
In a large bowl, add your rinsed and chopped kale, almonds, pumpkin seeds, and sliced apple. Toss in your dressing.
Top with shredded smoked mozzarella, and enjoy!
